BIOCHEMICAL INDICATORS OF BROILER CHICKENS BLOOD AND MEAT QUALITY WHEN USING HIGH-PROTEIN FEED ADDITIVES IN DIETS

In order to increase the biological value of compound feeds and the productive qualities
of broiler chickens, the optimal feeding doses of high-protein feed additives were established: 3%
maize gluten, 3% "Organic" and the combined use of 3% gluten and 3% "Organic". The
inclusion of 3% maize gluten and 3% "Organic" and their complex combination of 3% maize
gluten and 3% "Organic" in the compound feed for broiler chickens had a positive effect on the
carbohydrate and lipoid metabolism in the body of poultry and the quality of meat. Total protein
at 42 days of age in the 1st and the 2nd experiments increased by 13.09% and 19.53% (P<0.001),
respectively, the number of α-albumins by 2.33 and 14.59%, respectively, β-albumins – by 8.57
and 18.18, γ – albumins – by 21.36 and 23.16 (P<0.001); glucose level – by 9.6 - 18.4%
(P<0.001) and 5.0-10.8% (P<0.01); enzymatic activity increased: AST – by 0.8-2.3 and 5.3-9.6%;
ALT – by 13.1-19.2 and 4.7-9.7% (P<0.01); cholesterol level decreased by 15.3-18.2 and 7.3-
7.8%, alkaline phosphatase increased by 2.0-2.6 and 2.3-2.4%. In terms of creatinine level, no
significant differences were found between the experimental poultries. The enrichment of
compound feed with high-protein additives had a positive effect on the chemical composition of
poultry meat: in the pectoralis and femoral muscles, there was significantly more dry matter by
14.58-18.41 and 13.65 -18.27%, protein – by 14.62-17.76 and 13.33-16.57%, fat – by 17.1-31.58
and 18.26- 20%, and ash – by 5.55-14.81 and 18.46-33.85%.
