Abstract

Rosehip (Rosa spp.) contains valuable biologically active compounds such as vitamins, flavonoids, catechins, organic acids and trace elements, which have antioxidant and general tonic effects. However, if the territory of its growth is polluted with heavy metals, there is a danger of their accumulation in the fruits of the plant, which will affect the quality and safety of the used products. The study of the vitamin content in rosehip may be related to the evaluation of the level of anthropogenic pollution. The aim of the study was to evaluate the influence of heavy metals accumulation from the soil on the content of rutin and ascorbic acid in rosehips (Rosa spp.), which were growing in areas with different levels of anthropogenic impact. The selection of plant and soil samples was carried out in the period from September to December 2024 in Stavropol, Kulakov avenue, 8K, near the highway, in the courtyard of a block of flats at Pirogov Street, 62/1 and on the territory of the state nature reserve of regional significance “Kravtsovo Lake” which is located on the municipal district of Stavropol, Stavropol Territory. The research was conducted on the basis of the scientific and educational laboratory of Environmental Biogeochemistry of the North Caucasus Federal University. Determination of heavy metals was carried out by atomic absorption spectrometry on a spectrometer with flame atomization iCE 3300 (Thermo Scientific, USA), sample preparation of the analyzed plant material was carried out using the dry mineralization method. Quantitative determination of ascorbic acid was carried out according to GOST (government standard) 24556-89, routine – by permanganatometry. During the study we determined the content of heavy metals in the soil, rosehips (Rosa spp.), ascorbic acid, rutin and calculated the coefficient of biological uptake. It was found that the quantitative content of vitamins changes with an increase in the anthropogenic load, which was connected with the adverse effects of the environment.
