Abstract

One of the essential and scientifically grounded methods for increasing meat productivity of sheep is crossbreeding of ewes from domestic breeds with rams of the best meat breeds of the world gene pool. A hybrid sheep young from such a cross in the creation of certain conditions of feeding, already in the first generation inherits good meat qualities from its paternal breed. Unfortunately, in the herds of breeding sheep, in particular the North Caucasian meat and wool breed, where crossbreeding is unacceptable, the improvement of meat productivity is possible only by methods of inbreeding. In the process of scientific and industrial experiment, it was found that the weight of the fresh carcass in young rams of group II was 26,0 kg, which is 0,5-1,3 kg, or 2,2-5,5% more than that in herd mates from other selection variants. The data obtained indicate that the sheep of the North Caucasian meat and wool breed are characterized by good indices of meat productivity. But today, in addition to quantitative indices of meat productivity, the quality of meat products is also important. In this regard, the study of the relationship of slaughter indices in sheep with the microstructure of meat in young animals of the North Caucasian meat and wool breed seems to us very relevant.
