Abstract

Recently, the work has been begun to increase the meat productivity of small cattle in the republic. World scientists have conducted studies, that have shown that genes, which control the meat qualities of animals, increase meat productivity several times, which is encoded by several different mutations in the genes of myostatin, calpastatin and others. The article presents the results of the research on meat productivity and stress resistance of young sheep of Ile de France and Suffolk breeds using DNA markers of CAPN1, RYR (HSP70) genes, which was carried out in the EI “GSAU” in the research laboratory of “DNA-technologies”. For this purpose, genetic biomaterial was collected from eight-month-old young rams and ewe lambs (n=100) by notching the tissue of the auricle. The studies showed that 33 Suffolk and 28 Ile de France cattle had high meat formation according to the CAPN1 gene of the AA genotype, 14 Suffolk and 15 Ile de France cattle had the AB genotype, and 3 Suffolk and 7 Ile de France cattle had the undesirable BB genotype. Stress leads to the manifestation of PSE and DFD meat defects, which differ from NOR meat in a number of significant indicators, which affects the keeping time of meat and the quality of produced meat products. The impact of the slightest irritant immediately affected their growth, development, productivity and reproductive performance. As a result of the research, it was found that sheep were resistant to stress due to the RYR (HSP70) gene, which is responsible for stress resistance. Therefore, the meat quality characteristics are also good. Based on the conducted research, the method of testing sheep for stress resistance according to ethological responses of young animals with the impact of non-traditional external irritant has been developed. The fact of the matter is in registration and evaluation of behavioral (ethological) responses of young sheep at the age of four months in the conditions of conflict between food and defensive motivations of their behavior under the influence of stress.
